Payment for the meal is to be settled directly at the restaurant.

If you wish to request a lunch reservation, please contact the property by email.
In the event of a cancellation due to circumstances on the restaurant’s side, you will be notified one month in advance.
Please note that children must be of junior high school age or older to dine at the restaurant.

A modern Spanish restaurant with two Michelin stars, set within a 140-year-old traditional townhouse in the historic city of Kanazawa.

Located near one of Kanazawa’s most beloved destinations, the lively Omicho Market, respiracion is led by three owner-chefs: Tatsuro Ume, Keisuke Yagi, and Yusuke Kitagawa—childhood friends who all hail from Ishikawa Prefecture.
Chefs Ume and Yagi refined their craft in Barcelona, and their experiences abroad beautifully inform the restaurant’s contemporary culinary expression.

Each dish is modern, artful, and filled with a sense of delight and discovery.

Step inside the atmospheric machiya, and you are greeted by an interior that feels more like a refined art museum than a traditional townhouse.
The name respiracion means “breath” in Spanish—a poetic nod to the philosophy behind the restaurant.

Acting as anchors that carry the life and spirit of their producers, the three chefs move in perfect harmony, creating a one-of-a-kind dining experience unlike any other.

Please choose a specified time when checking in. Each time slot has a limited number of seats available and will be taken on a first-come-first-served basis, so there may not be certain times available depending on time of arrival.

Come and enjoy the Taiwanese breakfast served as a 5-course meal at Karch, a Taiwanese cuisine restaurant located in the basement of the hotel. You are able to choose from three different herbal porridges that uses rice grown by the owner himself, who has a farming background in Ishikawa.

Guest Room

A tranquil and secluded atmosphere. Yet, the space is comfortably furnished with a modern interior. Korinkyo is a place prescribed for healing fatigue, suitable for an enriched high quality stay.

Distillation&Shop

The distillery attached to the hotel distills forest materials from the Hakusan mountains, and the aroma can be enjoyed in both the guest rooms and rooftop sauna. Items such as Korinkyo's original amenity brand Petrichor, along with aroma water and essential oil made within the distillery is sold in the main shop.

Rooftop Sauna & Bath

The Finland-type sauna can be reserved for up to 4 people. The loyly sauna is equipped with aroma water from the hotel distillery using the forest materials of the Hakusan mountains. Also, the private terrace area is equipped with an open-air bath and cold water bath. Enjoy a sauna experience that will sharpen your senses with the colors, aromas, and atmosphere of the Hakusan foothills.
