By creating Italian cuisine that you can enjoy true flavors of the local ingredients, we would like to make a positive impact for the local community. The dishes made of fresh and fine ingredients colorfully expresses nature's blessing of Toi, Nishi-Izu.
For breakfast, we offer miso soup made with Ita salt, a type of salt smoked with firewood, as well as a sea bream dish made with "LOQUAT's secret dashi soy sauce."
-What is Ita Salt -
Ita, a location in Numazu City, Shizuoka Prefecture, overlooks Mt. Fuji and Suruga Bay, both of which have been selected as one of Japan's natural scenic spots.
"Ita salt from Okuda-So" is made by slowly smoking mineral-rich seawater harvested in the area with firewood until it becomes a beautiful crystal.
This "Ita salt," known for its umami that brings out the potential of ingredients, is recognized as a highly respected food ingredient by chefs in the culinary industry. It's used as a key ingredient that lays the foundation for taste in LOQUAT's on-site restaurant and gelateria. Additionally, it's also used by high-end sushi restaurants and Japanese restaurants in Tokyo.
At SANTi, we purchase the best ingredients of the season from closest producers to make our gelato. To assure our customers' comfort and safety, we strive to use no artificial preservatives, flavorings or food colorings.The breads and pastries at SANTi are mainly baked with Japanese flour, in pursuit of tastiness. We use ingredients such as butter, oil and water that are all completely safe to eat. Each piece is baked with care using natural yeast.
The selection of drinks made in Izu peninsula or from mineral water of Mt. Fuji has been prepared by our concierges who absolutely love the local area. Local craft beers and fresh juices of Nishi-Izu signature citrus fruits are chilled cold in the fridge.
The blessing of white loquat gently awakening the inner energy existing within yourself. Our rare white loquat treatment program has been prepared to bring out the inner beauty coming from yourself. Enjoy the ultimate relaxation brought to you by our expert technique with the treatment oil blended with the white loquat extract of Toi, Nishi-Izu. The Spa space is all yours so that you can relax during the treatment and enjoy a cup of tea at the end of our service without any other guests around. The service is available from 3:00pm - 6:00pm, with additional fees.
