■Chef Introduction■ Mizuki Tanaka
Born in Daisen Town, Tottori Prefecture, Mizuki Tanaka graduated from the Osaka Tsuji Culinary Institute before joining Kitcho Corporation. Tanaka worked in top-tier venues, including the Imperial Hotel Osaka, acquiring a profound understanding of Japanese cuisine and a wide range of culinary skills. After gaining experience in multiple Japanese restaurants, Tanaka established a personal style of Japanese cuisine. In 2023, with years of experience and learning at heart, Tanaka returned to their hometown in Tottori Prefecture and took the position of head chef at the family-owned Ryokan Midori-so. While honoring the traditions of Japanese cuisine, Tanaka combines acquired techniques and a unique sensibility to offer dishes that highlight local ingredients.
