MUGE – a exceptional shōjin ryōri experience

shōjin ryōri is the Japanese Buddhist cuisine, based largely on ancient culinary traditions & the rich medical wisdom of China, with roots reaching back to the early monastic Buddhist

traditions of India; thus it’s vegan by principle.

the tradition reached Japan, via Korea from China in waves from the 6th Ct. onwards & received its most fundamental influences through Zen-Buddhist worldviews & philosophy.

though, it’s not only a very unique & exceedingly delicious culinary tradition but first & foremost a spiritual practice!

karch, the restaurant of Korinkyo, invited Bernd Schellhorn, a native German who came to Japan some 35 years ago to study first traditional ceramics, sa-dō (the way of tea) & ka-dō (flower arrangement) and later on under the mentorship of some of the most respected chefs in Kyoto kyō-kaiseki, cha-kaiseki & shōjin ryōri. he is a professional independent art advisor & lives, with his wife Nagase Mitsue (who is a photographer; some selected works will be on view at this occasion) since five years on the beautiful peninsular, Noto-hanto.

on this rare occasion you are invited to experience the exquisite tastes of a well-balanced shōjin-inspired full dinner-course, focused on fresh local & seasonal ingredients to enrich & nourish both: your body & mind.

the meal will be served on authentic -mostly antique- Japanese ceramics & urushi-laquerware from Wajima.
