Chef Kondo, a native of Kochi, has arranged “sawachi ryori,” a local dish of Kochi Prefecture!


Sawachi-ryori" is a dish of hospitality unique to Kochi's Okyaku culture, where seafood, mountain delicacies, fried foods, and other delicacies are boldly arranged on a large platter.




Its free style of serving and sharing has created warm moments with family and friends.




This plan offers “creative sahabachi,” a dish that preserves the essence of traditional sahabachi while adding a modern twist to the seasoning and serving style.

The traditional Kochi dish “SAWACHI KYO” is expressed in the form of sweets.


SAWACHI KYO" is a dessert plate bowl with seasonal fruits and sweets.


Japanese and Western, local and seasonal, sweet and sour.


A dish that can be enjoyed by both the eyes and the palate, where everything is beautifully harmonized.

Chef Daichi Kondo


-Chef Daichi Kondo


Born in Kochi Prefecture. Graduated from Kochi Prefectural Minami High School,


After graduating from Kochi Prefecture Minami High School, he worked as a chef for 16 years at a famous restaurant in Kyoto, as a temporary teacher at a culinary school, and at a foreign-affiliated hotel.




In 2012, he was selected for the

World Culinary Olympics National Team.


In 2019, he was selected as

Asia's representative in “THE GOOD TASTE SERIES” hosted by

Hyatt.


2020

Park Hyatt Kyoto He was appointed as Sous Chef and has been working there for 4 and a half years.


August 2024

UZU K [restaurant without a store] is launched.
