CHIBA

The word "perus" is a Finnish word meaning "basic" or "elementary. We place importance on "making the most of the goodness of the ingredients" and "the basics" of the cyclical nature.

We are working daily to create a restaurant that coexists with nature, where we not only think about how to select environmentally friendly ingredients and how to arrange by-products from the cooking process, but also think about what comes after the food is consumed.

▲The restaurant is a special space with only 8 counter seats
▲The cuisine features many organic vegetables grown on the company's own farm.

Included in this plan (1 night with 2 meals)

1) Participation in farm tour before dinner 15:00-16:30

(advance reservation required / cancelled in stormy weather)

2) Dinner course at "perus" restaurant

 ※Usually lasts 2 ~ 3 hours.

3) Morning breakfast with fresh baked croissant 7:30~10:00

(with salad and soup)

(4) Use of the Library in the Eath *17:00~11:00 the next day

(5) Use of private Finnish sauna (reservation required, 5,000 yen per hour~/wearing swimsuit required)

The "Food Experience" begins with a farm tour to learn about the background of the ingredients.

The culinary experience begins with a farm tour held before the dinner course.

Guided by KURKKU FIELDS staff, the farm tour, which starts at 3:00 p.m. daily, takes visitors on a 90-minute tour of fields, dairy farms, and poultry farms, allowing them to experience the changing of the seasons and the cycles of nature.

During the tour, you will harvest vegetables and herbs grown on the farm, and depending on the season, you will also have the opportunity to gather wildflowers.

Vegetable scraps are put into worm compost or used as chicken feed.
Ashes from wood-fire cooking are sown in the field and used for glaze and other purposes when making vessels.
You can feel that we are kept alive by our connection with nature and the fields not only in the space, but also in a single dish.
▲The experience of feeling the "aroma" opens the door to further deliciousness. Please enjoy how the ingredients change with the aroma of the wood fire.
▲The Alcoholic Pairing menu offers a total of seven drinks to match the dishes, mainly domestic natural wines and Chiba Prefecture sake.
Non-alcohol pairings include original fermented drinks and non-alcoholic cocktails made with seasonal vegetables and wildflowers from the farm.

Optional additions

1) Alcoholic pairing / 9,350 yen (tax included)

※about 7 drinks in total

2) Non-alcoholic pairing / 7,150 yen (tax included)

※about 7 drinks in total

Profile

Born in 1995. Born in Tottori City, Tottori Prefecture. Worked as a sous chef at "Quinto Canto" in Osaka for about 4 and a half years. After training at starred restaurants in Italy, Spain, and other countries, he became the chef at KURKKU FIELDS "perus" in November 2021. His approach to food is to live in harmony with nature and to be close to the producer's thoughts and ingredients. He is a regular chef at the "EN NICHI BA" art festival, and at the special event "Hyakunen", he brings a new dining experience using an open flame under the theme of "sharing" between people and nature, and people and people. The "EN NICHI BA" art festival is scheduled to be held again in the spring of 2024.

.
Born in Chiba Prefecture in 1991. After graduating from a culinary school, he worked as a chef in Tokyo. He was attracted to the authentic wine culture during his training in France, and became a service person after working as a retailer of all kinds of alcoholic beverages. After working locally in Karuizawa, Matsumoto, Kanazawa, and Minami Uonuma, he joined the opening staff of KURKKU FIELDS "perus". He goes into the wilds himself to gather wild flowers, fruits, and bark, and offers a variety of drinks tailored to customers' tastes, including non-alcoholic cocktails made with natural ingredients.

Breakfast at your favorite place

Breakfast is served at Lanka bakery on the KURKKU FIELDS grounds, with freshly baked croissants as the main course each morning.

You can have it at your room terrace, farm side, grass field, or anywhere you like.

Salads and soups made with vegetables of the season grown on the farm are also served on bento plates, and are different from the dinner course menu, offering the dynamism of the farm's unique cuisine.

Time to Think in the "Library in the Earth" to Enrich Your Mind

After a hearty dinner or in the quiet morning hours, we recommend that you take a short walk from cocoon, pick up a book at the "Library in the Earth" and spend some time in peace and tranquility.

The bookshelves are arranged like strata in the "Library in the Earth" and the experience of reading a book in a space that seems to exist as part of the earth will be a special time in which the words will soak into your body more than usual and your thoughts will be cultivated in abundance.

Guests can use the lounge from 17:00 to 11:00 the next day.

Kitchen lounge "takka" and "sauna" are also available.

After dinner or before check-out, we recommend that you spend some time in the kitchen lounge "takka". Alcohol and soft drinks can be purchased at the corner store in the lounge, and communication with not only family and friends, but also other guests and staff is one of the attractions of staying at cocoon.

▲Available hours/21:00-23:00, 10:00-11:00 the next morning (17:00-21:00, 7:00-10:00 the next morning is the kitchen lounge for takka plan guests only)
The sauna, which you can enjoy before meals or in the morning, is reserved for one group at a time and is an authentic Finnish-style sauna using wood. Original Vihita using herbs and fragrant woods picked onsite, as well as a wax bath, are also available. Outside, there is a wooden deck equipped with a water bath where you can enjoy outdoor air bathing, and a natural pool surrounded by plantings, allowing you to enjoy a special sauna experience in the midst of nature.

Children's Facilities

Please note that it takes approximately 2 to 3 hours to serve dinner. During this time, children will be seated with an adult to enjoy the meal.

For the convenience of serving meals, we will prepare the same meals as adults, so reservations can only be made for children who can eat a one-course meal for one person. Portions can be adjusted.

Please make a reservation with the number of children in the room as the number of adults. Please note that the perus plan will not be displayed if you enter the number of children in your reservation.
